About Our Bagels
That little hole ensures that the bagel bakes and boils evenly. As the dough is fairly dense, the hole allows for water and heat to circulate around the maximum surface area.
Boiled before it is baked, providing a chewiness not associated with other breads. The dough is rolled, shaped into rings, then placed in boiling water for a few seconds before baking.
